Pitaya and Banana Oatmeal with Old Fashioned or Rolled Oats

INGREDIENTS:
1 large pitaya, peeled and diced
1 large banana, peeled and sliced
1 cup of old fashioned oats or rolled oats
2 cups of oat milk
¼ tsp sea salt
1 tsp vanilla extract
½ cup peanut butter
Optional: choice of seeds, such as pumpkin seeds, flaxseeds, and/or chia seeds
DIRECTIONS:
1. Add oat milk to a medium-sized saucepan over medium-high heat, uncovered, until the milk boils.
2. Immediately after the milk boils, have the saucepan over low heat.
2. Add the oats, salt, and vanilla extract to the saucepan and stir occasionally for about 3 minutes.
3. Add the banana to the saucepan and stir until it's well incorporated with the oats' mixture (about one minute), then remove from heat.
4. Add the pitaya, peanut butter, and the optional seeds to the saucepan, then stir until all the ingredients are well combined.
