The Steel-Cut Oats Version

INGREDIENTS:
1 large pitaya, peeled and diced
1 large banana, peeled and sliced
1 c of steel-cut oats
2 c of water
½ c of oat milk
¼ tsp sea salt
1 tsp vanilla extract
½ c peanut butter
Optional: choice of seeds, such as pumpkin seeds, flaxseeds, and/or chia seeds
DIRECTIONS:
1. Place water in a medium-sized saucepan over medium-high heat, uncovered, until the water boils.
2. Immediately after the water boils, have the saucepan over low heat.
3. Add the oats, salt, and vanilla extract to the saucepan and heat for about 19 minutes, stirring occasionally.
4. Add the banana to the saucepan and stir until it is well incorporated into the oats' mixture, then have the ingredients simmer for about a minute.
5. Remove the saucepan from heat, then cover it with a lid for about 3 minutes.
6. Add oat milk, the pitaya, and the peanut butter (and the optional seeds) to the saucepan, then stir the ingredients until they are well combined.
