HeFaam's Easy Ice Cream : Fruit of Choice or Mint Chocolate Chip
(Made without an ice cream machine, but a blender instead)

Fruit-of-Choice Ice Cream
Servings: 2
Prep time: 5 minutes
Freezing time: 4 - 16 hours
INGREDIENTS:
2 large bananas, peeled and sliced
1 1/4 c coconut cream, chilled
1 ½ c fruit of choice*, rinsed and coarsely chopped
*Suggestions: strawberries, mango chunks, or pumpkin puree with cinnamon to taste
DIRECTIONS:

Freeze bananas for at least 4 hours, as you want the banana slices to be impossible to break with your fingers.

Freeze the other fruit 3- at least 12 hours until it becomes very difficult or impossible to break with your fingers.

Blend both fruit and cream in a blender for several seconds, stopping the blender and stirring the fruit mixture with a large spatula when the ingredients look like they’re somewhat stagnate in your blender. Repeat this step until all the ingredients create a somewhat smooth texture (one in which some of the fruit is left intact and makes the dessert chunky).

Eat desired amount, taking note that if you store the ice cream in the freezer for about a night before eating it instead, the fruit flavor should have become stronger whereas the coconut flavor will have waned.

Store leftovers in a container that is freezable and microwavable (as it’s very difficult to scoop the ice cream out of containers without microwaving it first and will take way too long to thaw in room temperature), then place them in a freezer.

When you're ready to eat the ice cream again, thaw in a microwave for about 20-50 seconds (taking note microwaves may vary in watts) before so.
