Chilean Sea Bass & White Wine Sauce

INGREDIENTS:

4 cloves of garlic, peeled and chopped

3 10-oz Chilean sea bass fillets

3 tbsp avocado oil

1 ½ c dry white wine

¾ tsp salt

½ tsp pepper

6-9 sprigs of thyme, fresh

Lemon juice from about ½ lemon

 

DIRECTIONS:

  1. Add the oil to a large frying pan over medium-high heat until the oil shimmers, about 2-3 minutes.

  2. Add the garlic to the pan and stir until fragrant, about a minute.

  3. Season the fillets with the spices on both sides of them.

  4. Add the fillets to the pan, over medium-low heat for about 5 minutes.

  5. Add the thyme over the fish.

  6. Pour the wine into the pan, then cover the pan with a lid for about 10 minutes.

  7. Remove the pan from the heat, then squeeze lemon juice onto the fillets.
