Chicken Piccata

INGREDIENTS:
3 lbs. chicken breasts, skinless, boneless, and tenderized
All-purpose flour for dredging
¾ c lemon juice (from about 6-7 lemons)
¼ c chicken stock
½ lemon, rinsed and thinly sliced
½ c olive oil
3 tbsp brined capers
½ tsp salt
¼ tsp pepper
DIRECTIONS:
1. Place ¼ c of olive oil in a frying pan and have your stove on medium-high heat until the oil shimmers.
2. Cover chicken breasts in flour and then shake off the excess flour.
3. Season the chicken with the salt and pepper.
4. Place the chicken in the frying pan for about 4 minutes on each side.
5. Take out the chicken and place on a plate.
6. Put the rest of the oil, chicken stock, lemon juice, and capers in the frying pan and mix the sauce around until well combined.
7. Place the chicken breasts back in the frying pan along with the lemon slices for 3-4 minutes.
