Teff Flour, Walnut, Chocolate Chip Cookies

  • This recipe uses a very beneficial flour.  It has a low glycemic index, so if you’re trying to manage your blood sugar, this flour is a great choice for you to consume.  It’s high in fiber and has many nutrients such as, zinc, magnesium, and iron.

  • There are walnuts in this recipe.  Walnuts are rich in antioxidants and omega-3s.

  • The cookies without the chocolate chips aren’t very sweet, so they may be more enjoyable with sweetened ones.  Dark chocolate is full of antioxidants, iron, and more.

INGREDIENTS:
3 cups of teff flour 
4 eggs, beaten
¼ c coconut oil
¾ c unsweetened almond milk
¼ c of light brown sugar 
¾ c raw walnuts, chopped coarsely 
¾ c sweetened dark chocolate chips 
1 tsp baking powder 
1 tsp vanilla extract
1 tsp sea salt


DIRECTIONS:
1.    Preheat an oven to 325 degrees F.
2.    Put flour, sugar, baking powder, and sea salt in a large bowl, and mix all the ingredients well together.
3.    In a medium bowl, add the eggs, oil, almond milk, and vanilla extract, and then whisk all the wet ingredients together.
4.    Add all the wet ingredients to the dry ones, and then mix until everything is well combined.
5.    Fold in the walnuts and chocolate.
6.    Place 1” dollops of dough on an 18 X 13 baking sheet that’s lined with parchment paper one at a time, flattening each scoop with hands until the dough is ¼” thick and looks the way you want it to look after baking (the dough doesn’t flatten and expand while baking).  It doesn’t matter how close each flattened scoop of dough is to each other as long as each one is not on top of one another.  
7.    Place the dough in the oven, and bake for 16 minutes. 
8.    Cool on a wire rack.
